The Saucy African - One-Pot Chicken & Rice
A comforting, flavorful one-skillet meal made with tender chicken thighs and our Slow-Cooked Tomato Simmer Sauce.
Ingredients
Chicken
4 bone-in chicken thighs
2–3 tbsp neutral oil
All-purpose seasoning
Black pepper
Garlic powder
Smoked paprika
Rice
2 tbsp unsalted butter
⅛ medium yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
4 cloves garlic, minced
2 tbsp The Saucy African Slow-Cooked Tomato Simmer Sauce
2 cups jasmine rice (or rice of choice), rinsed
4 cups chicken stock or broth
Instructions
Sear the chicken
Heat oil in a large skillet over medium heat.
Season chicken thighs with all-purpose seasoning, black pepper, garlic powder, and smoked paprika.
Place chicken skin-side down and sear for 5 minutes per side, until browned.
Remove chicken and set aside.
Cook the vegetables
Reduce heat to medium-low.
If there’s excess oil, remove some and leave about 1 tbsp in the skillet.
Add butter, then stir in onions and both bell peppers. Sauté for 2 minutes.
Add garlic and cook for 1 additional minute.
Add simmer sauce & toast the rice
Stir in 2 tbsp The Saucy African Slow-Cooked Tomato Simmer Sauce.
Add the rinsed rice and toast for 2–3 minutes, stirring to coat the grains evenly.
Add broth & return chicken
Increase heat slightly to medium-high.
Pour in chicken broth and bring to a gentle simmer.
Taste the broth and adjust seasoning if needed.
Nestle the chicken thighs back into the skillet.
Cover & cook
Reduce heat to medium-low.
Cover with a lid and cook for 12–15 minutes.
Turn off the heat and let the pot rest, covered, for 10 minutes.
Finish & serve
Fluff the rice with a fork.
Ensure the chicken reaches an internal temperature of 165°F.
Serve warm and enjoy.
