Chicken Tomato Stew

A rich and comforting chicken tomato stew made effortlessly with The Saucy African slow cooked simmer sauce. Tender chicken simmered in bold tomato flavor- delicious with rice, pasta, potatoes, grains or plantains. 

Ingredients

1 × 12 oz jar The Saucy African Slow-Cooked Tomato Simmer Sauce (Chicken version recommended)
1⁄2 lb (225 g) chicken pieces (drumsticks, thighs, or boneless)
3⁄4–1 cup (180–240 ml) chicken broth or water
2 bell peppers (red, yellow, or green), chopped
2 Tbsp oil
1⁄2 tsp salt (optional, adjust to taste)
(Optional) 1⁄4 tsp The Saucy African Pepper Heat Blend
 

Instructions

  1. Heat oil in a pan over medium heat.
  2. Pour in The Saucy African Slow-Cooked Tomato Simmer Sauce and simmer for 3–4 minutes.
  3. Add The Saucy African Pepper Heat Blend (optional) and stir well.
  4. Add broth or water to reach your desired consistency.
  5. Stir in chopped bell peppers and simmer for 3–5 minutes.
  6. Add pre-cooked or grilled chicken and simmer for another 5–10 minutes on medium-low heat until flavors blend beautifully.
  7. Serve warm with rice, yams, or your favorite side.

Saucy Tip: For a thicker stew, let it simmer uncovered for the last 3 minutes.
