Vegetarian Tomato Stew 

This vegetarian tomato stew is warm, comforting, and deeply flavorful- powered by The Saucy African Slow cooked tomato simmer sauce. its flexible, nourishing, and perfect for any base you love: rice, pasta, potatoes, grains, bread or plantains. Add mushrooms, tofu, chickpeas, or lentils to make it heartier and completely customizable for your household. 

Ingredients
1 × 12 oz jar The Saucy African Slow-Cooked Tomato Simmer Sauce (Vegetarian) • 2 bell peppers (red or yellow), chopped
2 Tbsp oil
1⁄2 cup (120 ml) water or broth
1⁄2 tsp salt (optional)
(Optional) 1⁄4 tsp The Saucy African Pepper Heat Blend 

Optional Plant proteins (choose one or mix)

2-3 cups shredded mushrooms (oyster, portobello, or shitake)
1-2 cups of firm tofu, cubed
11 can chickpeas, drained and rinsed
1-2 cups of cooked lentils

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add in your plant protein of choice and sauté for 3-5 minutes. 
  3. Pour in The Saucy African Slow-Cooked Tomato Simmer Sauce and cook 3–4 minutes. 
  4. Add water or broth and stir well and allow it to simmer for about 3-5 minutes.
  5. (Optional) Stir in The Saucy African Pepper Heat Blend for some heat.
  6. Cover and simmer for about 5-7 minutes.
  7. Adjust salt to taste and serve over rice, couscous, or with bread.
