Cheesy Beef Stuffed Peppers

Ingredients

  • ½ jar (6 oz) The Saucy African Vegetarian Simmer Sauce
  • 1 tbsp The Saucy African Savory Blend
  • ¼–½ tsp The Saucy African Pepper Heat Blend (optional, for heat)
  • 4–6 sweet peppers or banana peppers
  • ½ lb ground beef
  • 1 cup cooked rice
  • ½ small onion, diced (optional)
  • 2 cloves garlic, minced (optional)
  • ¾ cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • Fresh parsley, chopped (optional)

Directions

  1. Preheat oven to 400°F.

  2. Slice peppers in half lengthwise and remove the seeds and membranes. Arrange in a lightly greased baking dish.

  3. Heat olive oil in a skillet over medium heat. If using onion and garlic, sauté onion for 2–3 minutes, until it begins to soften. Add garlic and cook for about 30 seconds.

  4. Add ground beef and Savory Blend. Break the beef apart and cook until browned and fully cooked. Drain excess fat if needed.

  5. Add cooked rice and Vegetarian Simmer Sauce. Add Pepper Heat Blend, if using. Stir well and cook for 2–3 minutes, until the filling is combined and heated through.

  6. Spoon the beef and rice mixture generously into the pepper halves.

  7. Bake for 20–25 minutes, or until the peppers are tender.

  8. Remove from the oven and sprinkle with mozzarella. Return to the oven for 3–5 minutes, just until the cheese is melted.

  9. Garnish with fresh parsley, if desired, and serve warm.
