Oven baked Jollof rice- Perfect for entertaining.

Indulge in our oven-baked Jollof rice, perfectly infused with rich flavors from The Saucy African simmer sauce.  This one-pot dish combines aromatic spices and vibrant ingredients, delivering a mouthwatering experience that's both convenient and delicious. Serves 6–8 • Total Time: 1 hour 

Ingredients
• 2 × 12 oz jar The Saucy African Tomato Simmer Sauce (chicken or vegetarian)
• 6 cups parboiled rice, rinsed
• 5 cups (1180 L) water or broth
• 3 Tbsp oil
• 1 tsp salt (1⁄2 tsp if using Vegetarian Sauce)
• (Optional) 1⁄2–1 tsp The Saucy African Pepper Heat Blend, for spice
• (Optional) 1–2 cups chopped vegetables or cooked meat (added halfway through)

Instructions 

1. Preheat oven to 450°F (230°C).
2. I
n a large oven-safe bowl or roasting pan, mix rice, The Saucy African Tomato Simmer Sauce, oil, and salt.

Add 5 cups of water or broth and stir well to combine.

Cover tightly with foil and bake for 30 minutes.

Carefully remove from oven, stir to ensure even color, and (optional) add cooked meat or vegetables.
6.
Reseal with foil and bake for another 30 minutes, until the rice is tender and fluffy.
7.
Let rest for 5 minutes before fluffing and serving.

Saucy Tip: Stirring at the halfway point ensures that gorgeous even orange Jollof color.

Notes

1. Steam cooks Jollof NOT Water. Allow more cook time than adding water if rice is hard at the end of the cook time and only add water if rice looks dry and hard to touch. 

2. Re-seal and place back into the oven 10 minutes at a time if still has water after the total cook time of 40 minutes. 

3. Overlap 2 pieces of foil to ensure an adequate seal.

4. Remember to add an extra 10 minutes of cooking time for any veggies, plus another 10 minutes if you’re adding cooked meat! 

5. Don’t forget to add salt (recommend 1tsp at a time) if additional water has been added.
