Ingredients
• 2 × 12 oz jar The Saucy African Tomato Simmer Sauce (chicken or vegetarian)
• 6 cups parboiled rice, rinsed
• 5 cups (1180 L) water or broth
• 3 Tbsp oil
• 1 tsp salt (1⁄2 tsp if using Vegetarian Sauce)
• (Optional) 1⁄2–1 tsp The Saucy African Pepper Heat Blend, for spice
• (Optional) 1–2 cups chopped vegetables or cooked meat (added halfway through)
Instructions
1. Preheat oven to 450°F (230°C).
2. In a large oven-safe bowl or roasting pan, mix rice, The Saucy African Tomato Simmer Sauce, oil, and salt.
3. Add 5 cups of water or broth and stir well to combine.
4. Cover tightly with foil and bake for 30 minutes.
5. Carefully remove from oven, stir to ensure even color, and (optional) add cooked meat or vegetables.
6. Reseal with foil and bake for another 30 minutes, until the rice is tender and fluffy.
7. Let rest for 5 minutes before fluffing and serving.
Saucy Tip: Stirring at the halfway point ensures that gorgeous even orange Jollof color.
